I eat healthy but I'm gaining weight, why?

The problem is rarely a lack of discipline. It stems from a flawed measuring tool that is consistently biased in the same direction.

The question

"I've cut out processed foods, I cook, and I've eliminated refined sugars. Why isn't anything changing?"

Faced with this plateau, the first instinct is almost always to get stricter: restrict more, cut out another food, skip a meal. This is exactly the strategy that makes a routine unsustainable and eventually leads to giving up entirely.

Two very common mechanisms explain this gap, and neither has anything to do with your discipline.

What science says

A calorie does not distinguish between a healthy food and an unhealthy one.

A tablespoon of olive oil provides about 120 calories. A handful of almonds, about 160. These foods deserve a place in a healthy diet, but replacing a processed snack with almonds doesn't necessarily make your day lighter. Sometimes, it's the opposite.

Fats are the most energy-dense foods that exist, regardless of their quality. On this specific point, your body makes no distinction.

No one accurately estimates what they eat.

We can now precisely measure the energy a person actually burns and compare it to what they report eating. The gap appears everywhere, and it always goes in the same direction.

When people keep a daily food diary, they underestimate their intake by 10 to 20%. When they fill out a questionnaire from memory, the gap rises to 20 or 30%. On average, it hovers around a quarter.

This error is not random. It always involves the same items: cooking fats, sauces, portions estimated by eye, and quantities served without measuring.

Imagine tracking your budget by recording every expense, but never logging bank fees, automatic subscriptions, or cash purchases.

Your spreadsheet would be perfectly maintained, yet systematically off by a quarter. You wouldn't be lying to anyone; you would simply have blind spots—always the same ones, always in the same direction. You could impose ironclad discipline on yourself and still never understand why the numbers don't add up.

No amount of willpower can fix a faulty instrument.

What we observe at the studio

People who come to us with this question have almost always already done the hard part. They cook, they’ve cut out ultra-processed foods, and they know how to distinguish good products from bad ones. When it comes to the quality of their diet, there is often nothing to fix.

Our job, therefore, is not to hand them yet another meal plan. It is to make an ordinary week visible, without changing anything, and then look together at where the gap actually lies. In most cases, it comes down to two or three specific items, and rarely the ones the person suspected.

The goal is not to measure everything indefinitely. It is to calibrate your judgment so that it becomes reliable without an instrument.

What this changes for you

Don't look for a "guilty" food. There probably isn't one. The gap doesn't come from a product to eliminate, but from a total that was poorly estimated.

Before getting stricter, look for what you aren't seeing. The right question isn't "what should I cut out?" but "what am I missing?"

Your dietary structure must fit into your life. If it forces you to turn down dinner invitations and prepare every meal in advance, it won't last, and that won't be a motivation problem.

Most people don't eat too much. They measure poorly.
